Enjoy a 2014 Forest River FR3 RV for your family trip! The RV has eight (8) seat belts and can sleep up to 6 people comfortably. An additional 2 people can sleep on the floor in front of the recliners, when the slide is out if you want to bring sleeping bags. PLUS, if you are like us and can’t leave home without your four legged family members, you can bring up to two dogs for an add-on fee, plus one time deposit.

It has less than 20K miles and has just had new brakes installed (Fall 2021), fresh paint in the bathroom, and new bedding. In 2022, many updates have been made to continue to ensure the RV continues to serve your family when on vacation: new headlights, catalytic converter, Master Bedroom TV, and power steps! The 30′ RV is gas powered, Ford V10 motor, and has 30 amp electrical service when you plug-in at a camp site.

Our family’s RV has proved so much fun for us and are so happy we can provide you and your family with an opportunity to enjoy the open road.

Las Vegas, Nevada

Another successful group trip! May 2023 has led us to the beautiful Southwest area of Las Vegas, Nevada. Over a 6 day/5 night trip, there were 21 people who flew from Scotland, Baltimore, New York, and Saint Louis to come together for an unforgettable whirlwind of activities making memories to last a lifetime!

The trip itinerary included an Elvis Wedding, Adrenaline Junkies UTV Off-Roading & Visiting Nelson’s Landing Ghost Town, Fremont Street and Zip-lining on Slot-Zilla, and Absinthe Show! There is so much more to see of Las Vegas than just the main strip…..

Scotland

Check out the beautiful landscape & the beautiful people from a two-week Scotland excursion I planned for 21 people in 2022! The most recent group trip I coordinated included staying in 3 different cities, plus many sites/adventures in and around Edinburgh, Loch Ness, the Highlands, Isle of Skye, and Glasgow.

Vegan Overnight Oats

During my travels, I LOVE to eat and fortunately, once I’m home, I get to share and try new recipes I’ve picked up during my travels. Please enjoy this overnight oats recipe which was inspired by our stay at a small quaint Inn which served breakfast in adorable picnic baskets with fresh fruit, a warm croissant and different versions of overnight oats each morning.

Perhaps I wanted to reminisce, but I was determined to have delicious overnight oats when I arrived home. I immediately purchased jars on Amazon: Encheng 16 oz. Glass Jars with Airtight Lids and Leak Proof Rubber Gasket, Wide Mouth Mason Jars with hinged Lids for kitchen, Glass Storage Containers 6 Pack ($24.99). Then went to work to re-create something similar to the yummy morning treats the House of Juniper at Isle of Skye offered us.

Want to purchase the same jars I’ve purchased? I’ve included a Direct link below to Amazon Encheng Glass jars, but really ANY jar which can be sealed tightly will work. I wanted to have the same nostalgia feel and look from Scotland, but many folks prefer non-glass jars because its easier to tote for a quick breakfast or treat on the go!

Encheng Storage Containers

Ingredients

• Compote:
  • 4 Nectarines, diced
  • 1/2 pint of blueberries
  • 2 tbs butter
  • 1 tsp vanilla

• Overnight Oats (Per Serving/Jar):
  • 2/3 cup Quaker Reg. Oats
  • 1/3 cup Oat Vanilla Milk
  • 1/3 cup Vanilla Coconut Milk Yogurt
  • 1 tsp. Chia Seeds
  • 1 tbs. Orange Marmalade
  • 1 tbs sweet coconut flakes

• Multiply Overnight Oats Ingredients by the Number of Jars

Create Fruit Compote-
In a pan on medium heat, melt 2 tbs butter, add 4 nectarines which you’ve diced & 1/2 pint of blueberries to the melted butter, 1 tsp vanilla extract, 3/4 cups of sugar. Mix together until bubbly for 5-7 minutes & set to the side to cool.

Create Layered Overnight Oats in Individual Jars –
In 6 jars, begin to layer your overnight oat ingredients. Start with a layer of 2/3 cups of Quaker Oats (not the instant oats), followed by 1/3 cup of Vanilla Oat milk. Mix with a spoon to ensure the oats are thoroughly covered by the oat milk. Next, take 1/3 cup of Vanilla coconut milk yogurt and create your next layer on top of the oats/oat milk combination. Sprinkle 1 tsp Chia seeds, if you would like, and then Scoop 1 tablespoon of Orange Marmalade on top. Take 3 tablespoons of the fruit compote and layer on top of the orange marmalade. You can also take the extra juice from the fruit compote and evenly divide amongst the jars. As a final touch, sprinkle 1 tablespoon of sweet coconut flakes on top of the fruit compote and/or toasted almonds for a nice crunch. Place in the refrigerator for a minimum of 2 -3 hours, but best when left overnight for a yummy quick treat!

While I certainly can’t recreate the gorgeous view from our quaint “House of Juniper” Inn, a 3 story – 6 room inn, with additional separate cottages on property, I feel I successfully recreated a delicious morning treat which takes me back to those memorable 4 days/3 nights in every bite I take.
